Ingredients
  

Cake

  • 1 1/8  cups All-Purpose Flour
  • 1/2  tsp  Baking Powder
  • 1/2  tsp  Baking Soda
  • 1/4  tsp  Salt
  • 1 1/4  tsp  Ground Cinnamon
  • 1/2  tsp  Ground Nutmeg
  • 1/2  tsp  Ground Ginger
  • 1/4  tsp  Allspice
  • 1/8  tsp  Ground Cloves
  • 1  cup Packed Light-Brown Sugar
  • ¼ cup + 2 tablespoons Vegetable Oil
  • 1/2  cup  Unsweetened Applesauce
  • 2  Large Eggs
  • 1  tsp  Vanilla Extract
  • 1/2  cup Buttermilk

Cream Cheese Frosting

  • 8  oz  Cream Cheese
  • 1/4  cup Unsalted Butter  nearly at room temperature
  • 1 3/4  cups Powdered Sugar
  • 1/4  tsp  Vanilla Extract

Instructions
 

  • Preheat oven to 350 degrees. Spray Mini Loaf Baking Pan with non-stick baking spray.
  • In a mixing bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, allspice and cloves. Set aside.
  • Pour brown sugar in separate mixing bowl. Add vegetable oil and applesauce. Mix well.
  • Mix in eggs and vanilla.
  • Add in 1/2 of the flour mixture and mix on low speed until combined, then blend in buttermilk, then add remaining 1/2 of the flour mixture and mix until well combined.
  • Pour into baking pan. Bake in oven until toothpick inserted into center comes out clean, about 30-35 minutes.
  • Cool completely.
  • For the frosting: cream butter and cream cheese until smooth.
  • Mix in powdered sugar and vanilla and mix until blended.
  • Frost cooled cake with cream cheese frosting.
